This way we can stay within our budget and have more flexibility than using catered food. We’ll also bring salad from Costco as originally planned. This affects lunch only; cupcakes and orange slices from Carla are of course still part of the menu. Please let us know if you have any concerns or additions to this idea. Sebastopol Kitchen Mgr is "Jen" works 8-3, off Friday, will be in Sunday. However the clerk had a very negative attitude to the whole idea of catering a salad bar. Said "yes, it's possible" but clearly did not want to facilitate it. I don't know what's going on at Community Market but it's a bad vibe. Retail price of bagged spinach or salad greens: $9/lb Makr our own salad bar? 9 lbs mixed greens = 50 cups (from some website) ⇒ 2.8 2-cup servings per pound ($3.25/serving @ $9/lb) ⇒ 120 servings = 43 lbs. Salad dressing: up to 2oz per serving if not metered CONCLUSION: We could _make_ a green salad for $4.50-5/person including dressing.
